When I had started following the LCHF way of eating a few years back, I could never imagine that the regular coconut oil could be a part of my Heart Healthy Diet Plan. For me, Atkin’s diet was the only easiest and quick way to lose weight and it included a basic fiber-rich pescatarian diet. Following Atkin’s diet as an Indian vegetarian, it was really overwhelming to plan my meals. I was at a loss as to what is healthy and what is not. Eating high fat in place of low fat to lose weight was the total opposite of what we had been groomed as Indians.
I still remember when for the first time I realized the importance of coconut oil while on my weight loss journey; it was nothing better than feeling so dumb that how could I not know that.
