Whether it’s quarantine cooking or just any basic day, there’s something about baking in your kitchen that brings warm and happy thoughts.  In our house, muffins and cookies typically top our ‘baking’ lists, however ever since being quarantined at home, I’ve expanded my baking horizons with my daughter and have taken on some new recipes that are healthy and easy to bake.  So as my daughter says: bon appetit!

Baked Fruit

This has been one of our most fun finds.  You always hear of apple cobbler or baked apples, but did you know you can easily also bake bananas, peaches and pears?  I experimented with this and by using any fruit you’d like, add a little cooking spray (in lieu of butter), sprinkle the fruit with about 1 Tbsp of brown sugar and then slowly bake on 300*.  You can also add in cinnamon (a huge pop of flavor with that one) or nutmeg too (use nutmeg sparingly as when it bakes, becomes a very bold flavor).  Bake until you get your desired consistency and then serve with a small scoop of organic vanilla ice cream.

Cookies

Healthy and cookies don’t always seem to pair but this recipe from Kylee Cooks is exactly both! It has no sugar added and uses merely the sweetness of the fruit included to make it a sweet treat.  I love it and as Kylee (the author of the recipe) talks about, they’re honestly almost like a breakfast cookie!  Even another win for kiddos (cause what kid wouldn’t think it’s cool to get to eat cookies for breakfast) or for the mom on the go…makes it an easy treat with your morning cup of joe.

Muffins

Our daughter LOVES muffins…she equally loves making the muffins.  But muffins can be one of those tricky ‘naughty’ eats real quick with the butter, sugar and ‘stuff’ that gets added into them.  However, one of my personal tried and true recipes for blueberry muffins is this one is from Cookie and Kate.  This recipes calls for Greek yogurt which makes the bread nice and moist.  I’ve also made this recipe with both fresh blueberries or frozen like she shares.  I also like to use honey as the sweetener (as I always have it in the house and it helps with allergy season) and add the cinnamon.  These things are so good and healthy that I know I’m keeping my family eating well!
