Need a quick pick me up? Nutrient-rich energy bites will help you power through the day. This plant-based snack is made with natural ingredients and perfect when you’re craving something sweet. They’re a great snack to eat on the go, to pack for work or school, and even while you’re binging your favorite show. Plus, the whole family will enjoy them! Check out this recipe, or make it your own by adding in some of your favorite ingredients.

 

INGREDIENTS
  • 1/2 cup cashew butter
  • 1/2 cup almond butter
  • 1/2 cup chopped dates
  • 1 Tbsp flax seeds
  • 1 Tbsp chia seeds
  • 2 tsp lemon juice
  • 1 tsp vanilla extract
  • 1/2 – 1 cup shredded coconut (for rolling)
  • Optional: Add cacao nibs, raisins, or pistachios for extra flavor or crunch
  • Experiment: By using different nut or seed butters and extract flavors

DIRECTIONS
  1. Blend cashew butter, almond butter, and chopped dates in a blender or food processor.
  2. Add flax seeds, chia seeds, lemon juice, and vanilla to the mix and blend until combined.
  3. Line a container with parchment paper. Separate and roll mixture into 1-inch balls.
  4. Roll balls in shredded coconut and place in the container.
  5. Store the container in your fridge and enjoy throughout the week!
